Vinified from bunches that come from vines that are fifty to a hundred years old, located on the middle plots of Valtuille, at an altitude from 600 to 700m, where clay and stone live in harmony, giving the grape a greater complexity. The clays contribute fruity and sweet aromas that combine with the minerals from the stones. After a cold premaceration of the grapes, the elaboration continues in temperature controlled stainless steel tanks. Once this phase is finished, the resulting wine remains in contact with its fine lees for two months and is aged in French oak barrels for twelve months before bottling.
